Ingredients
  

  • 1/2 cup Quick-cooking rolled oats
  • 1 cup Milk or water dairy or non-dairy
  • 1/4 cup Apple finely shredded (about 1/4 small apple)
  • 1/4 cup Carrot finely shredded (about 1/2 small carrot)
  • 1/2 tsp Ground cinnamon
  • pinch Salt
  • 1-2 tsp Maple syrup or honey to taste
  • 1 tbsp Chopped nuts or seeds optional, for topping

Method
 

  1. Finely shred the apple and carrot using a box grater or food processor. Measure out all remaining ingredients.
  2. In a small saucepan, combine the quick-cooking rolled oats, milk (or water), shredded apple, shredded carrot, ground cinnamon, and a pinch of salt. Stir well to mix.
  3. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, then reduce the heat to low. Cook for 5-7 minutes, stirring occasionally, until the oats are tender and the oatmeal has thickened to your desired consistency.
  4. Remove the saucepan from the heat. Stir in the maple syrup or honey to sweeten. Taste and adjust sweetness if desired. Pour into a bowl, add optional chopped nuts or seeds for extra crunch, and serve immediately.

Notes

For a microwave version: Combine all ingredients (except sweetener and toppings) in a large microwave-safe bowl. Microwave on high for 1.5-2 minutes, stir, then microwave for another 1-1.5 minutes, or until desired consistency is reached. Stir in sweetener and serve. Adjust cooking time for your microwave's wattage. For extra flavor, a tiny splash of vanilla extract can be added at the end.
