- Finely shred the apple and carrot using a box grater or food processor. Measure out all remaining ingredients.
- In a small saucepan, combine the quick-cooking rolled oats, milk (or water), shredded apple, shredded carrot, ground cinnamon, and a pinch of salt. Stir well to mix.
- Place the saucepan over medium heat. Bring the mixture to a gentle simmer, then reduce the heat to low. Cook for 5-7 minutes, stirring occasionally, until the oats are tender and the oatmeal has thickened to your desired consistency.
- Remove the saucepan from the heat. Stir in the maple syrup or honey to sweeten. Taste and adjust sweetness if desired. Pour into a bowl, add optional chopped nuts or seeds for extra crunch, and serve immediately.
Notes
For a microwave version: Combine all ingredients (except sweetener and toppings) in a large microwave-safe bowl. Microwave on high for 1.5-2 minutes, stir, then microwave for another 1-1.5 minutes, or until desired consistency is reached. Stir in sweetener and serve. Adjust cooking time for your microwave's wattage. For extra flavor, a tiny splash of vanilla extract can be added at the end.
