Method
- In a mixing bowl, combine the cottage cheese and egg. Blend or mash until mostly smooth.
- Add the flour, baking powder, garlic powder, salt, and olive oil. Mix until a soft dough forms.
- Lightly flour a surface and divide the dough into 4 equal portions.
- Roll each portion into a thin flatbread, about 1/4 inch thick.
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Lightly oil the air fryer basket and place the flatbreads inside with space between them.
- Air fry for 6–7 minutes, flip, then cook another 5–6 minutes until golden and crisp.
- Remove and sprinkle with optional toppings while warm. Serve immediately.

These flatbreads are great for wraps, dipping, or as a protein-rich bread alternative.
