Method
- Pat the pickle spears dry with paper towels to remove excess moisture.
- In a bowl, mix the shredded mozzarella, shredded chicken, garlic powder, onion powder, paprika, fresh dill, salt, and pepper.
- Lay an egg roll wrapper on a flat surface. Place one pickle spear near a corner and top it with a generous spoonful of the filling mixture.
- Roll tightly by folding the sides inward and rolling forward until sealed. Lightly wet the edge with water to close securely.
- Preheat the air fryer to 375°F (190°C).
- Lightly spray the rolled egg rolls with olive oil spray and place them in a single layer in the air fryer basket.
- Air fry for 8–10 minutes, flipping halfway through, until crispy and golden brown.
- Let cool slightly before serving. Enjoy with your favorite dipping sauce such as ranch or spicy mayo.
