  • 12 large dill pickle spears
  • 12 egg roll wrappers
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup shredded chicken optional
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tbsp fresh dill chopped
  • salt and pepper to taste
  • olive oil spray

Method
 

  1. Pat the pickle spears dry with paper towels to remove excess moisture.
  2. In a bowl, mix the shredded mozzarella, shredded chicken, garlic powder, onion powder, paprika, fresh dill, salt, and pepper.
  3. Lay an egg roll wrapper on a flat surface. Place one pickle spear near a corner and top it with a generous spoonful of the filling mixture.
  4. Roll tightly by folding the sides inward and rolling forward until sealed. Lightly wet the edge with water to close securely.
  5. Preheat the air fryer to 375°F (190°C).
  6. Lightly spray the rolled egg rolls with olive oil spray and place them in a single layer in the air fryer basket.
  7. Air fry for 8–10 minutes, flipping halfway through, until crispy and golden brown.
  8. Let cool slightly before serving. Enjoy with your favorite dipping sauce such as ranch or spicy mayo.
