Apple Turnovers Cream Filled

Ingredients
  

Pastry
  • 1 sheet puff pastry thawed if frozen
  • 1 egg beaten, for egg wash
Apple Cream Filling
  • 2 apples peeled, cored, and diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1/2 cup heavy cream for cream filling
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet, melt butter and add diced apples, brown sugar, and cinnamon. Cook until apples are soft and caramelized.
  3. Add cornstarch slurry and stir until the mixture thickens. Remove from heat and let cool.
  4. Whip heavy cream with vanilla extract until soft peaks form. Gently fold in the cooled apple mixture.
  5. Roll out puff pastry and cut into 6 equal squares. Spoon apple cream mixture onto one half of each square, then fold over to form triangles. Seal edges with a fork.
  6. Brush tops with beaten egg and bake for 20–25 minutes, until golden brown and puffed.
  7. Cool slightly before serving. Dust with powdered sugar if desired.

Notes

For an extra treat, drizzle with caramel sauce or serve with a scoop of vanilla ice cream.
