Bacon Mushroom Swiss Meatloaf

Ingredients
  

Meatloaf Base
  • 1 1/2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs lightly beaten
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
Add-ins
  • 6 slices bacon cooked and chopped
  • 1 cup mushrooms sautéed and chopped
  • 1 cup Swiss cheese shredded
  • 1 small onion finely chopped
Topping
  • 1/4 cup ketchup
  • 2 tbsp brown sugar

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan.
  2. In a skillet, cook bacon until crispy. Remove and chop. In the same pan, sauté mushrooms and onions until softened.
  3. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, salt, and pepper. Mix until just combined.
  4. Fold in chopped bacon, sautéed mushrooms, onions, and shredded Swiss cheese.
  5. Transfer the mixture into the loaf pan and shape evenly.
  6. Mix ketchup and brown sugar, then spread over the top of the meatloaf.
  7. Bake for 55–60 minutes, or until internal temperature reaches 160°F (70°C). Let rest 10 minutes before slicing.

Notes

For extra flavor, try adding a dash of Worcestershire sauce or Dijon mustard to the meat mixture. Serve with mashed potatoes or roasted vegetables.
