Mushrooms & Filling
  • 16 large button mushrooms stems removed
  • 6 slices beef bacon or turkey bacon finely chopped
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 4 oz cream cheese softened
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp breadcrumbs
  • 1 tbsp fresh parsley finely chopped
  • 1/4 tsp black pepper
  • salt to taste

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Clean the mushrooms and remove the stems. Finely chop the stems and set aside.
  3. Heat olive oil in a skillet over medium heat. Cook the chopped beef or turkey bacon for 3–4 minutes until slightly crispy.
  4. Add the chopped mushroom stems and garlic. Sauté for 2–3 minutes until softened and fragrant.
  5. Remove from heat and let cool slightly. Stir in cream cheese, Parmesan, breadcrumbs, parsley, black pepper, and salt.
  6. Spoon the filling generously into each mushroom cap.
  7. Arrange the stuffed mushrooms on the prepared baking sheet.
  8. Bake for 20–25 minutes until the mushrooms are tender and the tops are golden brown.
  9. Serve warm as an appetizer or party snack.

Notes

For extra crunch, sprinkle a little additional Parmesan or breadcrumbs on top before baking.
