- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the potatoes into wedges and place them in a large bowl.
- Add olive oil, Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and pepper. Toss until the potatoes are evenly coated.
- Arrange the wedges in a single layer on the prepared baking sheet, skin side down.
- Bake for 35–40 minutes, flipping halfway through, until golden and crispy.
- Sprinkle with chopped parsley and serve hot with your favorite dipping sauce.
Notes
For extra crispiness, soak potato wedges in cold water for 30 minutes before baking. Pat dry completely before tossing with oil and seasonings.
