Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 tsp baking soda
  • 1/2 tsp salt
Pecan Filling
  • 1 cup chopped pecans toasted
  • 1/3 cup maple syrup or light corn syrup
  • 1 tsp cinnamon

Method
 

  1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture until combined.
  4. Fold in oats, pecans, syrup, and cinnamon. Chill the dough for 30 minutes.
  5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Scoop dough onto the prepared sheet and bake for 12 minutes or until edges are golden brown.
  7. Cool on a wire rack and enjoy warm or at room temperature.

Notes

For extra indulgence, drizzle the cooled cookies with caramel sauce or dip half of each cookie in melted chocolate.
