Beef Enchiladas

These classic Beef Enchiladas are packed with seasoned ground beef, melted cheese, and a rich red enchilada sauce — the perfect family-friendly Mexican-inspired dinner!

Ingredients
  

Beef Filling
  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup enchilada sauce plus extra for topping
  • 1 cup shredded cheddar cheese divided

  • 6 flour tortillas 8-inch
  • 1/4 cup chopped fresh cilantro optional garnish
  • sour cream for serving

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef and onion until browned, about 5–7 minutes. Drain any excess fat.
  3. Add garlic, chili powder, cumin, salt, and black pepper. Stir to combine, then add 1 cup enchilada sauce and 1/2 cup of the cheese. Mix until cheese is melted and filling is thickened.
  4. Spoon about 1/4 cup of the beef mixture into each tortilla, roll up tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce evenly over the tortillas and sprinkle with the rest of the cheese.
  6. Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
  7. Garnish with chopped cilantro and serve hot with sour cream.

Notes

Try adding black beans or corn to the filling for extra texture. You can also use corn tortillas for a gluten-free version!
