Method
- Season the chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 5–7 minutes until golden.
- Flip the chicken, reduce the heat, and cook for another 5 minutes.
- In a bowl, whisk together the apple cider, Dijon mustard, brown sugar, and garlic.
- Pour the cider mixture into the skillet. Simmer for 10–15 minutes, basting occasionally, until the glaze reduces and thickens.
- Serve the chicken with extra glaze spooned on top.
Notes
For extra depth of flavor, reduce the cider by half before adding it to the pan, or add a sprig of rosemary while simmering.
