Ingredients
  

Chicken
  • 6 chicken thighs bone-in, skin-on
  • 1 tbsp olive oil
Cider Glaze
  • 1 cup apple cider
  • 2 tbsp Dijon mustard
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 5–7 minutes until golden.
  3. Flip the chicken, reduce the heat, and cook for another 5 minutes.
  4. In a bowl, whisk together the apple cider, Dijon mustard, brown sugar, and garlic.
  5. Pour the cider mixture into the skillet. Simmer for 10–15 minutes, basting occasionally, until the glaze reduces and thickens.
  6. Serve the chicken with extra glaze spooned on top.

Notes

For extra depth of flavor, reduce the cider by half before adding it to the pan, or add a sprig of rosemary while simmering.
