Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1/4 cup milk

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together flour, baking soda, baking powder, salt, and spices in a medium bowl.
  3. In a large bowl, mix pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients to the wet mixture, alternating with milk.
  5. Stir gently until just combined, avoiding overmixing.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–65 minutes, until a toothpick inserted comes out clean.
  8. Cool in pan briefly, then transfer to a wire rack to cool completely.

Notes

This pumpkin bread tastes even better the next day once the flavors have fully developed.
