  • 3/4 cup uncooked white rice short or medium grain preferred
  • 2 cups water
  • 2 cups whole milk plus extra for desired consistency
  • 2/3 cup granulated sugar
  • 1 tbsp butter
Flavoring
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon plus extra for garnish
  • 1/4 tsp salt

  • 1/3 cup raisins optional

Method
 

  1. In a medium saucepan, bring the water to a boil. Stir in the rice and reduce heat to low. Cover and simmer for 15 minutes, or until most of the water is absorbed.
  2. Add milk, sugar, butter, salt, and cinnamon. Cook uncovered over medium heat, stirring frequently until the mixture thickens, about 25–30 minutes.
  3. Stir in vanilla extract and raisins (if using). Continue cooking for another 2–3 minutes until creamy and smooth.
  4. Serve warm or chilled. Sprinkle with additional cinnamon or nutmeg before serving.

Notes

For an extra creamy texture, stir in a splash of cream or evaporated milk before serving. Store leftovers in the refrigerator for up to 3 days.
