  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups cooked chicken shredded
  • 2 cans white beans drained and rinsed
  • 1 can green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1/2 tsp oregano dried
  • 1/2 tsp chili powder
  • 1/2 cup sour cream
  • 1 cup Monterey Jack cheese shredded

Method
 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Stir in shredded chicken, beans, green chilies, chicken broth, and spices. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove from heat and stir in sour cream and shredded cheese until melted and creamy.
  5. Serve hot, topped with extra cheese, cilantro, or avocado if desired.

Notes

This recipe is delicious topped with tortilla chips, jalapeños, or a squeeze of lime juice. It also freezes well for quick weeknight dinners!
