Method
- In a bowl, mix chicken with soy sauce, cornstarch, and sesame oil. Let marinate for 10–15 minutes.
- In a wok or large skillet, heat oil over medium-high heat. Stir-fry chicken until lightly browned and nearly cooked through. Remove and set aside.
- In the same pan, add garlic and onion. Sauté for 1–2 minutes until fragrant.
- Add mushrooms (and bell peppers, if using) and stir-fry until softened and lightly browned.
- Return chicken to the pan. Pour in soy sauce, oyster sauce, sugar, water, and black pepper. Stir well to coat.
- Simmer for 2–3 minutes until sauce thickens slightly and chicken is fully cooked.
- Serve hot with steamed rice or noodles, garnished with extra black pepper and green onions if desired.
Notes
Use freshly cracked black pepper for the best flavor. For extra heat, add a pinch of crushed red chili flakes.
