- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and bell pepper, sautéing for 4–5 minutes until softened.
- Add the spinach and cooked chicken or turkey sausage. Stir for 2 minutes until the spinach wilts.
- In a bowl, whisk the eggs with salt and pepper.
- Push the vegetables and sausage to one side of the skillet. Add the remaining olive oil and pour in the eggs.
- Scramble gently until cooked to your preference, then mix everything together.
- Warm the tortillas in a pan or microwave.
- Spoon the egg mixture into each tortilla, then top with cheddar cheese, avocado slices, and cilantro.
- Serve with salsa or hot sauce for an extra kick.
Notes
For extra flavor, warm tortillas directly over a gas flame for a slight char.
