Ingredients
  

Tacos
  • 6 small flour or corn tortillas
  • 4 large eggs
  • 2 tbsp olive oil
  • 1/2 cup chicken or turkey sausage cooked, crumbled
  • 1/2 cup cheddar cheese shredded
  • 1 small onion diced
  • 1 bell pepper diced
  • 1 cup fresh spinach chopped
  • 1 avocado sliced
  • 1/4 cup fresh cilantro chopped
  • salt and pepper to taste
  • salsa or hot sauce for serving

Method
 

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and bell pepper, sautéing for 4–5 minutes until softened.
  2. Add the spinach and cooked chicken or turkey sausage. Stir for 2 minutes until the spinach wilts.
  3. In a bowl, whisk the eggs with salt and pepper.
  4. Push the vegetables and sausage to one side of the skillet. Add the remaining olive oil and pour in the eggs.
  5. Scramble gently until cooked to your preference, then mix everything together.
  6. Warm the tortillas in a pan or microwave.
  7. Spoon the egg mixture into each tortilla, then top with cheddar cheese, avocado slices, and cilantro.
  8. Serve with salsa or hot sauce for an extra kick.

Notes

For extra flavor, warm tortillas directly over a gas flame for a slight char.
