Ingredients
  

Cookie Dough
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
Chocolate Filling
  • 3/4 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil or butter for melting chocolate

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a medium bowl.
  3. Cream the butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Beat in the peanut butter, then add the egg and vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. Roll the dough into 1-inch balls and place on the prepared baking sheet.
  7. Bake for 10–12 minutes until lightly golden.
  8. Press an indentation into the center of each cookie immediately after baking.
  9. Melt the chocolate chips with coconut oil or butter until smooth.
  10. Spoon the melted chocolate into the center of each cookie.
  11. Allow cookies to cool completely so the chocolate can set.

Notes

If the dough feels too soft, chill it for 20 minutes before rolling. Store cookies in an airtight container at room temperature for up to 3 days.
