Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss the cut potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread evenly on the baking sheet.
- Bake for 25–30 minutes, flipping halfway, until golden and crispy.
- Mix the shredded chicken with buffalo sauce until well coated.
- Remove the fries from the oven and top with the buffalo chicken.
- Sprinkle mozzarella and cheddar over the top, then return to the oven for 5–7 minutes until the cheese is melted.
- Drizzle ranch dressing over the loaded fries.
- Finish with sliced green onions and chopped parsley before serving.
Notes
For extra heat, add jalapeños or a drizzle of extra-hot buffalo sauce!
