Ingredients
  

Fries
  • 2 medium russet potatoes cut into fries
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • salt and pepper to taste
Topping
  • 1 boneless skinless chicken breast cooked and shredded
  • 1/3 cup buffalo sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 2 green onions sliced
  • 1 tbsp fresh parsley chopped
  • 1/4 cup ranch dressing

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the cut potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread evenly on the baking sheet.
  3. Bake for 25–30 minutes, flipping halfway, until golden and crispy.
  4. Mix the shredded chicken with buffalo sauce until well coated.
  5. Remove the fries from the oven and top with the buffalo chicken.
  6. Sprinkle mozzarella and cheddar over the top, then return to the oven for 5–7 minutes until the cheese is melted.
  7. Drizzle ranch dressing over the loaded fries.
  8. Finish with sliced green onions and chopped parsley before serving.

Notes

For extra heat, add jalapeños or a drizzle of extra-hot buffalo sauce!
