Ingredients
  

Crust
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar packed
  • 1 cup unsalted butter cold and cubed
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
Apple Layer
  • 3 medium apples peeled and thinly sliced
  • 1/2 tsp ground cinnamon
  • 2 tbsp brown sugar
Topping
  • 1/2 cup caramel sauce for drizzling

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  2. Combine flour, brown sugar, and butter in a bowl. Mix until crumbly, then press evenly into the bottom of the pan. Bake for 15 minutes.
  3. In a mixing bowl, beat cream cheese, sugar, eggs, and vanilla until smooth. Spread over the slightly cooled crust.
  4. Toss sliced apples with cinnamon and brown sugar, then layer evenly over the cheesecake filling.
  5. Bake for 30 minutes, or until the center is set. Cool completely, then refrigerate for at least 2 hours.
  6. Before serving, drizzle with caramel sauce and slice into bars.

Notes

Try adding chopped pecans or a sprinkle of sea salt on top for extra flavor. These bars can be stored in the fridge for up to 4 days.
