- Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
- Combine flour, brown sugar, and butter in a bowl. Mix until crumbly, then press evenly into the bottom of the pan. Bake for 15 minutes.
- In a mixing bowl, beat cream cheese, sugar, eggs, and vanilla until smooth. Spread over the slightly cooled crust.
- Toss sliced apples with cinnamon and brown sugar, then layer evenly over the cheesecake filling.
- Bake for 30 minutes, or until the center is set. Cool completely, then refrigerate for at least 2 hours.
- Before serving, drizzle with caramel sauce and slice into bars.
Notes
Try adding chopped pecans or a sprinkle of sea salt on top for extra flavor. These bars can be stored in the fridge for up to 4 days.
