- Bring a large pot of salted water to a boil. Cook tortellini according to package directions. Drain and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove and set aside.
- In the same skillet, melt 2 tablespoons butter. Add garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream, bring to a gentle simmer, and whisk in Parmesan cheese until melted and smooth.
- Season with salt and pepper. Add cooked tortellini and shrimp, tossing to coat evenly in sauce.
- Garnish with chopped parsley and extra Parmesan. Serve immediately and enjoy!
Notes
For extra flavor, add a squeeze of lemon juice or a pinch of red pepper flakes. This dish also works beautifully with spinach or sun-dried tomatoes mixed in!
