- Preheat the oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat.
- Add ground beef, salt, black pepper, garlic powder, onion powder, and smoked paprika.
- Cook for 6–8 minutes, breaking up the meat, until fully browned. Drain excess fat.
- Spread tortilla chips evenly on a large baking sheet.
- Layer half of the cooked beef over the chips, followed by half of the cheddar and mozzarella cheese.
- Repeat with remaining beef and cheese.
- Bake for 10–12 minutes until the cheese is melted and bubbly.
- Meanwhile, whisk together mayonnaise, ketchup, mustard, apple cider vinegar, and sugar until smooth.
- Remove nachos from the oven and top with tomatoes, red onion, pickles, and shredded lettuce.
- Drizzle the sauce over the nachos just before serving.

Serve immediately for best texture. Add jalapeños or bacon bits for extra flavor.
