This cheesy chicken casserole is a comforting, family-friendly dish made with tender chicken, pasta or rice, broccoli, and a creamy, cheesy sauce baked until bubbly and golden.

Ingredients
  

  • 2 cups cooked chicken breast shredded
  • 2 cups cooked pasta or rice
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup broccoli florets lightly steamed
  • 1 cup cheddar cheese shredded
  • 1/2 cup mozzarella cheese shredded
  • 1 can cream of chicken soup 10.5 oz
  • 1/2 cup milk
  • 1/2 tsp paprika
  • 1/2 tsp dried parsley
  • salt to taste
  • black pepper to taste
  • 2 tbsp breadcrumbs optional topping

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
  2. Heat olive oil in a skillet and sauté onion for 3–4 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. In a large bowl, combine chicken, pasta or rice, broccoli, onion, and garlic.
  5. Stir in soup, milk, paprika, parsley, salt, and black pepper.
  6. Add half of the cheddar and mozzarella cheese and mix well.
  7. Transfer mixture to the casserole dish and spread evenly.
  8. Top with remaining cheese and breadcrumbs.
  9. Bake uncovered for 25–30 minutes until bubbly and golden.
  10. Let rest for 5 minutes before serving.

Notes

You can substitute cooked rice for pasta or add mushrooms for extra flavor.
