Ingredients
  

Focaccia Dough
  • 2 1/4 cups all-purpose flour
  • 1 cup warm water
  • 2 tsp active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 3 tablespoons olive oil divided
  • 4 cloves garlic minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • fresh parsley chopped, optional

Method
 

  1. In a bowl, combine warm water, yeast, and sugar. Let sit for 5–7 minutes until foamy.
  2. Add flour, salt, and 2 tablespoons olive oil. Mix until a soft dough forms.
  3. Knead the dough on a floured surface for 5 minutes, then place it in a greased bowl. Cover and let rise for 1 hour or until doubled in size.
  4. Preheat oven to 400°F (200°C).
  5. Transfer the dough to a greased baking pan. Stretch it out gently to form an even layer.
  6. Drizzle with remaining 1 tablespoon olive oil. Use fingertips to create dimples all over the surface.
  7. Sprinkle garlic evenly across the dough, followed by mozzarella, parmesan, oregano, and thyme.
  8. Bake for 20–22 minutes until golden and the cheese is bubbly.
  9. Let cool slightly, top with fresh parsley if desired, and slice before serving.

Notes

For extra flavor, add a drizzle of garlic butter right after baking.
