Method
- Preheat oven to 375°F (190°C).
- Rinse the salmon fillets and pat dry. Carefully cut a slit into each fillet to form a pocket.
- In a bowl, combine shrimp, cream cheese, mozzarella, Parmesan, lemon juice, garlic, and parsley until creamy.
- Season salmon fillets on both sides with salt and black pepper.
- Stuff each salmon pocket with the shrimp-cheese mixture, pressing gently to secure.
- Heat olive oil in an oven-safe skillet over medium heat. Sear salmon 2–3 minutes per side until golden.
- Transfer skillet to the oven and bake for 12–15 minutes until salmon is cooked and filling is bubbling.
- Remove from the oven and rest for 2 minutes before serving.
Notes
Great served with steamed vegetables or a fresh green salad for a balanced meal.
