Ingredients
  

Salmon
  • 4 fillets salmon fillets
Shrimp Cheese Filling
  • 1 cup cooked shrimp chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons Parmesan cheese grated
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon olive oil
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Rinse the salmon fillets and pat dry. Carefully cut a slit into each fillet to form a pocket.
  3. In a bowl, combine shrimp, cream cheese, mozzarella, Parmesan, lemon juice, garlic, and parsley until creamy.
  4. Season salmon fillets on both sides with salt and black pepper.
  5. Stuff each salmon pocket with the shrimp-cheese mixture, pressing gently to secure.
  6. Heat olive oil in an oven-safe skillet over medium heat. Sear salmon 2–3 minutes per side until golden.
  7. Transfer skillet to the oven and bake for 12–15 minutes until salmon is cooked and filling is bubbling.
  8. Remove from the oven and rest for 2 minutes before serving.

Notes

Great served with steamed vegetables or a fresh green salad for a balanced meal.
