Ingredients
  

Roasted Potatoes
  • 4 cups russet potatoes diced into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
Taco Beef
  • 1 lb ground beef
  • 2 tbsp taco seasoning store-bought or homemade
  • 1/4 cup water
Toppings
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream optional
  • 1/2 cup salsa optional
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crispy.
  2. While the potatoes are roasting, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer for 5 minutes until well coated.
  4. Once potatoes are cooked, transfer to a serving dish. Top with taco beef and shredded cheddar cheese. Return to the oven for 2–3 minutes until cheese melts.
  5. Garnish with sour cream, salsa, and cilantro before serving.

Notes

You can easily swap ground beef for ground chicken or turkey. Add jalapeños or hot sauce for extra spice!
