Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the softened butter with brown sugar and granulated sugar until fluffy.
- Add eggs one at a time, mixing well, then stir in vanilla extract.
- Whisk together flour, cocoa powder, baking soda, and salt in a separate bowl.
- Gradually add dry ingredients to wet ingredients until a soft dough forms.
- Fold in chocolate chips.
- Scoop 2 tablespoons of dough, flatten, place a caramel candy in the center, and wrap the dough around it to seal.
- Place filled dough balls on baking sheet, spacing them well.
- Bake for 10–12 minutes until edges are set but centers are soft.
- Immediately sprinkle cookies with sea salt and let cool for 5 minutes before transferring to a rack.
Notes
For extra gooey centers, slightly underbake and let the residual heat finish the cookies as they cool.
