  • 8 oz pasta (penne or fusilli)
  • 2 cups broccoli florets fresh or frozen
  • 1 lb chicken breast cut into bite-sized pieces
Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk warm
  • 0.5 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Cook pasta in salted boiling water according to package directions. Add broccoli florets during the last 2 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden and fully cooked through. Remove and set aside.
  3. In the same skillet, melt butter and add minced garlic. Stir in flour and cook for 1 minute to form a roux.
  4. Gradually whisk in warm milk until smooth. Cook until the sauce thickens, about 3–4 minutes.
  5. Stir in Parmesan cheese, salt, and pepper. Add the cooked chicken, pasta, and broccoli back to the skillet. Toss everything to coat evenly in the sauce.
  6. Serve warm, topped with extra Parmesan if desired.

Notes

You can substitute milk with cream for a richer sauce or add a pinch of chili flakes for a spicy kick.
