Method
- Preheat oven to 375°F (190°C).
- Slice the chicken breasts horizontally to create 4 thin cutlets.
- Season the flour with salt and pepper. Dredge each cutlet in the flour, then dip into the beaten egg.
- Combine breadcrumbs, Parmesan, garlic powder, and Italian seasoning. Coat each cutlet in the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden and crisp.
- Transfer chicken to a baking sheet, top with mozzarella, and bake for 10 minutes or until melted.
- Split and toast the sandwich rolls.
- Spread Caesar dressing on both sides of each roll. Add romaine lettuce, tomato slices, and the cheesy chicken cutlets.
- Close the sandwiches, slice, and serve warm.
Notes
For extra flavor, add crispy bacon, banana peppers, or a drizzle of balsamic glaze!
