Chicken Parm Caesar Sandwich

Ingredients
  

Chicken
  • 2 boneless skinless chicken breasts
  • 1/2 cup flour
  • 1 egg beaten
  • 2 tbsp olive oil
Breading
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • salt and pepper to taste
Assembly
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Caesar dressing
  • 1 cup shredded romaine lettuce
  • 2 large sandwich rolls
  • 1 tomato sliced

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Slice the chicken breasts horizontally to create 4 thin cutlets.
  3. Season the flour with salt and pepper. Dredge each cutlet in the flour, then dip into the beaten egg.
  4. Combine breadcrumbs, Parmesan, garlic powder, and Italian seasoning. Coat each cutlet in the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden and crisp.
  6. Transfer chicken to a baking sheet, top with mozzarella, and bake for 10 minutes or until melted.
  7. Split and toast the sandwich rolls.
  8. Spread Caesar dressing on both sides of each roll. Add romaine lettuce, tomato slices, and the cheesy chicken cutlets.
  9. Close the sandwiches, slice, and serve warm.

Notes

For extra flavor, add crispy bacon, banana peppers, or a drizzle of balsamic glaze!
