Ingredients

  • 1 lb medium shrimp peeled and deveined
  • 2 tbsp chipotle peppers in adobo finely chopped
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 8 tortillas corn tortillas small
  • 1 cup shredded cabbage
  • 1 avocado sliced
  • 1/4 cup fresh cilantro chopped
  • lime wedges for serving

Method
 

  1. In a bowl, combine chipotle peppers, lime juice, lime zest, garlic, olive oil, honey, paprika, cumin, salt, and black pepper.
  2. Add the shrimp to the bowl and mix until fully coated. Let marinate for 10–15 minutes.
  3. Heat a skillet over medium-high heat and cook the shrimp for 2–3 minutes per side, or until pink and cooked through.
  4. Warm the corn tortillas in a dry skillet or directly over a low flame until soft.
  5. Assemble the tacos by layering cabbage, shrimp, avocado slices, and cilantro.
  6. Serve with lime wedges for squeezing over the top.

Notes

For extra smoky heat, add more chipotle or a splash of adobo sauce to the marinade.
