Ingredients
  

Base
  • 2 cups pecan halves toasted
Caramel Layer
  • 1 bag soft caramels about 11 oz
  • 2 tbsp heavy cream
Chocolate Coating
  • 2 cups semi-sweet chocolate chips or melting wafers
  • 1 tbsp vegetable oil optional, for smoother melting

Method
 

  1. Line a baking sheet with parchment paper. Arrange pecans in small clusters of 3-4 pieces each.
  2. In a microwave-safe bowl, melt caramels with heavy cream in 30-second intervals, stirring until smooth.
  3. Spoon a small amount of melted caramel over each pecan cluster. Let set for 5 minutes.
  4. Melt chocolate chips (with oil if using) until smooth. Spoon or drizzle chocolate over the caramel clusters, covering completely.
  5. Allow clusters to cool and harden at room temperature or refrigerate until set. Enjoy!

Notes

For variety, try using dark chocolate or adding a sprinkle of sea salt on top of each cluster before the chocolate sets.
