Christmas Crack (Saltine Cracker Toffee)

Ingredients
  

Base Ingredients
  • 40 saltine crackers about 1 sleeve
  • 1 cup unsalted butter cut into pieces
  • 1 cup packed brown sugar
Topping
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup holiday sprinkles or crushed candy canes for topping
  • 1/2 cup chopped nuts (optional) such as pecans or almonds

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly grease it.
  2. Arrange the saltine crackers in a single layer on the prepared baking sheet, covering the entire surface.
  3. In a medium saucepan, melt the butter and brown sugar over medium heat. Bring to a boil and cook for 3 minutes, stirring constantly until smooth and bubbly.
  4. Pour the toffee mixture evenly over the crackers and spread with a spatula to cover them completely.
  5. Bake for 5 minutes, or until the toffee is bubbling. Remove from oven and immediately sprinkle chocolate chips on top. Let sit for 2 minutes, then spread melted chocolate evenly with a spatula.
  6. Top with sprinkles or crushed candy canes (and nuts if desired). Allow to cool completely, then refrigerate for at least 30 minutes until set.
  7. Break into pieces and enjoy! Store in an airtight container for up to one week.

Notes

For variation, try using graham crackers or Ritz crackers instead of saltines, or drizzle white chocolate over the top for an extra festive touch!
