Method
- Place the eggs in a saucepan and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 10–12 minutes.
- Transfer eggs to an ice bath and let cool completely. Peel the eggs carefully.
- Slice each egg in half lengthwise. Remove yolks and place them in a mixing bowl.
- Mash yolks with mayonnaise, mustard, salt, pepper, and paprika until smooth and creamy.
- Spoon or pipe the filling into the egg white halves.
- Top with diced red bell pepper and chopped chives for a festive red and green Christmas look. Sprinkle with extra paprika if desired.
- Chill in the refrigerator until ready to serve.
Notes
For extra holiday flair, tint half the egg whites green with natural food coloring before filling!
