- Line an 8x8 pan with parchment paper.
- Mix crushed sugar cookies and melted butter. Press firmly into the bottom of the pan to form the crust.
- Beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
- Fold in whipped heavy cream gently until fully combined.
- Spread the cheesecake mixture over the crust evenly.
- Top with crushed cookies and holiday sprinkles.
- Refrigerate for at least 4 hours or until set. Slice into bars and serve chilled.
Notes
For extra festive flair, use red and green sugar cookies for both the crust and topping!
