Ingredients
  

Crust
  • 2 cups crushed sugar cookies holiday cookies preferred
  • 6 tbsp unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/4 cups heavy cream whipped to stiff peaks
Topping
  • 1/2 cup crushed sugar cookies
  • holiday sprinkles

Method
 

  1. Line an 8x8 pan with parchment paper.
  2. Mix crushed sugar cookies and melted butter. Press firmly into the bottom of the pan to form the crust.
  3. Beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
  4. Fold in whipped heavy cream gently until fully combined.
  5. Spread the cheesecake mixture over the crust evenly.
  6. Top with crushed cookies and holiday sprinkles.
  7. Refrigerate for at least 4 hours or until set. Slice into bars and serve chilled.

Notes

For extra festive flair, use red and green sugar cookies for both the crust and topping!
