Ingredients
  

Base Layer
  • 1 sleeve saltine crackers about 40 crackers
Caramel Layer
  • 1 cup butter
  • 1 cup brown sugar packed
Topping
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup white chocolate chips
  • 1/4 cup granulated sugar for dusting
  • 1 tsp ground cinnamon for dusting

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange saltine crackers in a single layer.
  2. In a saucepan, melt butter and brown sugar together. Bring to a boil and cook for 3 minutes, stirring constantly. Remove from heat and stir in vanilla and cinnamon.
  3. Pour caramel mixture evenly over the crackers and spread gently to coat. Bake for 5 minutes until bubbly.
  4. Remove from oven and sprinkle with white chocolate chips. Let sit for 2 minutes, then spread melted chocolate evenly over the top.
  5. Mix sugar and cinnamon together, then sprinkle generously over the melted chocolate. Allow to cool completely before breaking into pieces.

Notes

For extra flair, drizzle with caramel sauce or add a pinch of sea salt before the candy sets. Store in an airtight container for up to 5 days.
