Preparation
- Slice the bananas into very thin, even rounds, about 1/8 inch thick. Thinner slices will result in crispier chips. For best results, a mandoline slicer can be used.
- In a large mixing bowl, gently toss the banana slices with the melted coconut oil or avocado oil until lightly and evenly coated. This helps the seasoning stick and promotes crispiness.
Make the Cinnamon Sugar Coating
- In a small bowl, whisk together the granulated sugar, ground cinnamon, and salt.
- Add the cinnamon sugar mixture to the bowl with the oiled banana slices. Gently toss until all the banana slices are evenly coated. Be careful not to break the slices.
Air Frying
- Preheat your air fryer to 300°F (150°C) for 5 minutes.
- Arrange a single layer of banana slices in the air fryer basket, ensuring they do not overlap. You will need to cook these in multiple batches to avoid overcrowding.
- Air fry for 15-20 minutes, flipping or shaking the basket every 5-7 minutes, until the chips are golden brown and crisp. Cooking time may vary based on slice thickness and air fryer model. Keep a close eye on them, as they can burn quickly once they start to crisp up.
- Transfer the cooked banana chips to a wire rack to cool completely. They will crisp up further as they cool. Repeat with any remaining banana slices.
Serve or Store
- Once completely cool, serve immediately or store in an airtight container at room temperature for up to 3-5 days. Ensure they are fully cooled before storing to prevent sogginess.
Notes
Banana Ripeness: Use bananas that are ripe (sweet) but still firm. Overly ripe bananas will be too soft and difficult to slice thinly and crisp properly. Green bananas will lack sweetness.
Slice Consistency: Consistency in slice thickness is key for even cooking. A mandoline slicer can achieve perfectly uniform slices, but a sharp knife works well too.
Crispiness: The chips may still feel a little soft right out of the air fryer, but they will become much crispier as they cool on a wire rack. Don't overcrowd the air fryer basket; this is crucial for crispy results.
Storage: Store in an airtight container. If they lose some crispness, you can briefly reheat them in the air fryer for 2-3 minutes at 300°F (150°C) until crispy again.
