- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the mashed sweet potato, nut butter, maple syrup, egg, and vanilla until smooth.
- Add the oats, cinnamon, nutmeg, baking powder, and salt. Stir until a thick dough forms.
- Fold in the raisins and chopped nuts until evenly distributed.
- Scoop about 2 tablespoons of dough per cookie onto the baking sheet and gently flatten.
- Bake for 18–22 minutes until set and lightly golden around the edges.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
