- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash, dry, and cut the potatoes into halves or quarters if large.
- In a large bowl, mix mayonnaise, olive oil, and all seasonings until combined.
- Add potatoes and toss until fully coated.
- Spread potatoes on the baking sheet in a single layer, cut side down.
- Roast for 35–40 minutes, flipping halfway, until golden and crispy.
- Sprinkle cheddar cheese over hot potatoes and return to oven until melted.
- Garnish with parsley and green onions before serving.
