- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Cook chicken pieces until golden brown and cooked through. Remove and set aside.
- In the same skillet, add sausage slices and cook until browned. Add bell peppers and garlic, sautéing for 2–3 minutes.
- Return the chicken to the skillet. Stir in Cajun seasoning, chicken broth, and heavy cream. Simmer for 3–4 minutes until sauce slightly thickens.
- Add cooked pasta and parmesan cheese. Toss until pasta is coated in the creamy sauce. Season with salt and pepper to taste.
- Garnish with chopped parsley and serve hot.
Notes
Adjust Cajun seasoning for more or less spice. Andouille sausage works best for authentic flavor, but any smoked sausage will do.
