Main Ingredients
  • 8 oz penne pasta uncooked
  • 1 tbsp olive oil
  • 2 boneless skinless chicken breasts cut into strips
  • 8 oz smoked sausage sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic minced
Sauce
  • 1 tbsp Cajun seasoning adjust to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
Optional Garnish
  • chopped parsley for garnish

Method
 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Cook chicken pieces until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add sausage slices and cook until browned. Add bell peppers and garlic, sautéing for 2–3 minutes.
  4. Return the chicken to the skillet. Stir in Cajun seasoning, chicken broth, and heavy cream. Simmer for 3–4 minutes until sauce slightly thickens.
  5. Add cooked pasta and parmesan cheese. Toss until pasta is coated in the creamy sauce. Season with salt and pepper to taste.
  6. Garnish with chopped parsley and serve hot.

Notes

Adjust Cajun seasoning for more or less spice. Andouille sausage works best for authentic flavor, but any smoked sausage will do.
