- Cook the penne pasta according to package instructions. Drain and set aside.
- Season the chicken strips with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5–6 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, melt the butter and sauté the red and yellow bell peppers for 3–4 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth. Add paprika, onion powder, salt, and pepper, stirring well.
- Bring the sauce to a gentle simmer, then stir in Parmesan cheese until melted and creamy.
- Return the cooked chicken and drained pasta to the skillet. Toss to coat in the creamy Cajun sauce.
- Simmer for 2–3 minutes to blend flavors, then garnish with fresh parsley before serving.
Notes
For extra heat, add a pinch of cayenne or more Cajun seasoning!
