Ingredients
  

Chicken
  • 2 boneless skinless chicken breasts sliced into strips
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
Pasta
  • 8 oz penne pasta
Vegetables
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 3 garlic cloves minced
Sauce
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • salt and pepper to taste
Garnish
  • fresh parsley chopped

Method
 

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Season the chicken strips with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5–6 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, melt the butter and sauté the red and yellow bell peppers for 3–4 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in the heavy cream and chicken broth. Add paprika, onion powder, salt, and pepper, stirring well.
  7. Bring the sauce to a gentle simmer, then stir in Parmesan cheese until melted and creamy.
  8. Return the cooked chicken and drained pasta to the skillet. Toss to coat in the creamy Cajun sauce.
  9. Simmer for 2–3 minutes to blend flavors, then garnish with fresh parsley before serving.

Notes

For extra heat, add a pinch of cayenne or more Cajun seasoning!
