Ingredients
  

Pasta and Chicken
  • 12 oz fettuccine pasta or pasta of choice
  • 2 boneless skinless chicken breasts sliced into thin strips
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper
Creamy Garlic Parmesan Sauce
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • fresh parsley for garnish

Method
 

  1. Cook pasta in salted boiling water according to package directions until al dente. Drain and set aside.
  2. Season chicken strips with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden and cooked through, about 5–6 minutes. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, then stir in parmesan cheese and Italian seasoning. Simmer for 3–4 minutes until the sauce thickens slightly.
  5. Add cooked pasta and chicken back into the skillet. Toss to coat evenly in the creamy garlic parmesan sauce.
  6. Garnish with fresh parsley and serve hot.

Notes

Use freshly grated parmesan for best texture and flavor. Add a pinch of red pepper flakes for a little heat or stir in spinach for extra greens.
