Ingredients

For the Pizza
  • 1 lb fresh pizza dough room temperature
  • 1.5 cups mozzarella cheese shredded, low-moisture, part-skim
  • 0.5 cup sharp white cheddar cheese shredded
  • 1.5 cups dill pickles thinly sliced, drained well, patted dry (about 4-5 medium spears)
  • 1 tbsp fresh dill chopped, for garnish, optional
For the Creamy Dill Sauce
  • 4 oz cream cheese softened
  • 0.25 cup sour cream
  • 2 tbsp pickle juice from the pickle jar
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tbsp fresh dill chopped, or 1 tsp dried dill
  • 0.25 tsp black pepper freshly ground
  • 0.25 tsp salt or to taste

Equipment

  • Large Mixing Bowl
  • Whisk
  • Baking Sheet or Pizza Stone
  • Pizza Cutter
  • Cutting Board
  • Sharp Knife

Method

Step 1: Prepare Creamy Dill Sauce
  1. In a medium mixing bowl, combine the softened cream cheese, sour cream, pickle juice, garlic powder, onion powder, chopped fresh dill (or dried), black pepper, and salt. Whisk until completely smooth and creamy. Taste and adjust seasoning if needed. Set aside.
Step 2: Prepare Oven and Dough
  1. Preheat your oven to 450°F (230°C). If using a pizza stone, place it in the oven during preheating. If using a baking sheet, lightly grease it or line with parchment paper. Allow the pizza dough to come to room temperature for at least 30 minutes before use, as this makes it easier to work with.
Step 3: Assemble Pizza
  1. On a lightly floured surface, stretch or roll out the pizza dough into a roughly 12-14 inch circle or rectangle, depending on your baking sheet. Carefully transfer the dough to your preheated pizza stone or prepared baking sheet.
  2. Spread the creamy dill sauce evenly over the pizza dough, leaving about a 1/2-inch border for the crust.
  3. Sprinkle the shredded mozzarella cheese over the sauce, followed by the shredded sharp white cheddar cheese. Arrange the thinly sliced and well-drained dill pickles evenly over the cheese layer.
Step 4: Bake and Serve
  1. Transfer the pizza to the preheated oven. Bake for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned. Cooking time may vary based on your oven and dough thickness.
  2. Carefully remove the pizza from the oven. If desired, sprinkle with extra fresh chopped dill. Let the pizza rest for 2-3 minutes before slicing with a pizza cutter and serving hot.

Notes

Pickle Preparation: Ensuring the pickle slices are well-drained and patted dry is crucial to prevent a soggy pizza crust. Dough Tip: If your dough is too springy, cover it with a towel and let it rest for another 10-15 minutes before trying to roll it out again. Variations: For a spicy kick, add a pinch of red pepper flakes with the cheese. Cooked bacon bits or crispy fried onions would also be a delicious addition.
