Creamy Oven-Baked Buffalo Chicken Dip

Ingredients
  

For the Chicken
  • 2 lbs cooked chicken breast shredded (rotisserie chicken works great)
For the Dip Base
  • 1 (8 oz) block cream cheese softened
  • 1/2 cup Frank's RedHot Buffalo Wing Sauce
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup sour cream
For the Cheese Layer
  • 1 1/2 cups shredded cheddar cheese divided
  • 1 cup shredded mozzarella cheese divided
Optional Garnish
  • 2 tbsp chopped fresh chives or green onions
  • 1/4 cup crumbled blue cheese

Method
 

Prepare the Dip
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the softened cream cheese, buffalo wing sauce, ranch dressing (or blue cheese dressing), and sour cream. Mix until thoroughly smooth and creamy.
  3. Fold in the shredded cooked chicken and 1 cup of shredded cheddar cheese, along with 1/2 cup of shredded mozzarella cheese into the creamy mixture. Stir until everything is well combined.
  4. Spread the buffalo chicken dip mixture evenly into a 9x13 inch baking dish.
  5. Sprinkle the remaining 1/2 cup of shredded cheddar cheese and 1/2 cup of shredded mozzarella cheese over the top of the dip.
Bake and Serve
  1. Bake for 20-25 minutes, or until the dip is hot, bubbly around the edges, and the cheese on top is melted and slightly golden.
  2. Remove from the oven. If desired, garnish with chopped chives or green onions and crumbled blue cheese. Serve hot with tortilla chips, celery sticks, carrot sticks, or pita bread.

Notes

For extra convenience, use a pre-cooked rotisserie chicken and shred it. To shred chicken easily, place cooked chicken breasts in a large bowl and use an electric hand mixer on low speed. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the microwave or oven.
