- Heat the olive oil in a large pot over medium heat. Add the onion and sauté for 5 minutes until soft.
- Add the garlic and smoked paprika, cooking for 1 minute until fragrant.
- Stir in the crushed tomatoes, white beans, and vegetable broth. Simmer for 15 minutes.
- Pour in the heavy cream, stir well, and simmer for 5 more minutes. Season with salt and pepper.
- Serve warm, topped with fresh basil if desired.
Notes
For a vegan version, replace heavy cream with coconut milk or cashew cream.
