- Combine mashed potatoes, mozzarella, parmesan, green onions, garlic powder, paprika, salt, and pepper in a large bowl. Mix until smooth.
- Scoop and roll mixture into golf-ball sized balls, pressing gently to keep them firm.
- Prepare a breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
- Roll each ball in flour, then egg, then breadcrumbs to fully coat.
- Place coated potato balls on a tray and refrigerate for 15–20 minutes to firm up.
- Preheat air fryer to 375°F (190°C).
- Spray potato balls lightly with cooking spray and place in a single layer in the air fryer basket.
- Air fry for 10–12 minutes, shaking halfway, until golden and crispy.
- Serve warm with your favorite dipping sauce.
Notes
For extra flavor, try adding crumbled bacon or jalapeños to the potato mixture!
