Ingredients
  

For the Onion Rings
  • 1 large Yellow Onion peeled and sliced into 1/2-inch thick rings, separated
For the Wet Coating
  • 2 large Eggs
  • 2 tbsp Heavy Cream
  • 1 tsp Dijon Mustard
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
For the Dry Coating
  • 1/2 cup Almond Flour super-fine
  • 1/4 cup Grated Parmesan Cheese finely grated
  • 1 tbsp Psyllium Husk Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Cayenne Pepper optional, for a kick
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
For Cooking
  • as needed Avocado Oil Spray

Method
 

Prepare the Onion and Coating Stations
  1. Carefully separate the sliced onion into individual rings. Set aside.
  2. In a shallow dish, whisk together the eggs, heavy cream, Dijon mustard, 1/4 tsp salt, and 1/8 tsp black pepper until well combined. This is your wet coating.
  3. In another shallow dish, combine the almond flour, grated Parmesan cheese, psyllium husk powder, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), 1/2 tsp salt, and 1/4 tsp black pepper. Whisk until evenly mixed. This is your dry coating.
Dredge the Onion Rings
  1. Take one onion ring at a time and dip it into the wet coating, ensuring it's fully covered. Let any excess drip off.
  2. Immediately transfer the wet onion ring to the dry coating. Press the dry mixture onto the ring to ensure a thick, even coating. Gently shake off any loose excess. Place the coated ring on a plate or wire rack.
  3. Repeat this process with all remaining onion rings. For best results, allow the coated rings to sit for 5-10 minutes to help the coating adhere.
Air Fry the Onion Rings
  1. Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with avocado oil.
  2. Arrange a single layer of coated onion rings in the air fryer basket, ensuring they do not overlap. You will need to cook them in batches.
  3. Lightly spray the tops of the onion rings with avocado oil.
  4. Air fry for 8-10 minutes, flipping them halfway through, until golden brown and crispy. Cooking time may vary slightly depending on your air fryer. If they are not crispy enough, you can cook for an additional 1-2 minutes.
  5. Remove the cooked onion rings from the air fryer and serve immediately. Repeat with the remaining batches.

Notes

For extra crispiness, ensure the psyllium husk powder is finely ground. You can also bake these in a preheated oven at 400°F (200°C) for 15-20 minutes, flipping halfway, until golden brown. Serve with your favorite keto-friendly dipping sauce like sugar-free ketchup or a spicy aioli. Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the air fryer to regain crispness.
