- In a mixing bowl, combine mashed potatoes, salt, pepper, chili flakes, and cornstarch until well mixed.
- Take a small portion of the potato mixture and flatten it in your hand. Place a cube of mozzarella in the center and seal it completely into a ball.
- Dip each potato ball into beaten egg, then roll in breadcrumbs until fully coated.
- Heat oil in a deep pan over medium heat. Fry the potato bombs in batches until golden brown and crispy, about 3–4 minutes.
- In a small pan, melt butter and sauté garlic for 30 seconds. Brush the garlic butter over the fried potato bombs.
- Sprinkle with parsley and serve hot with ketchup or spicy mayo!
Notes
For extra flavor, add grated parmesan or herbs into the potato mixture. These are best enjoyed hot for that perfect cheese pull!
