Main Ingredients
  • 1.5 lbs chicken breasts sliced
  • 3 bell peppers red, yellow, green; sliced
  • 1 large onion sliced
  • 1 tbsp olive oil
Seasonings
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lime juiced
  • 1/4 cup chicken broth
  • tortillas for serving
  • optional toppings avocado, cilantro, lime wedges, salsa

Method
 

  1. Add the sliced peppers and onions to the bottom of the crockpot.
  2. Place the sliced chicken on top of the vegetables.
  3. Drizzle olive oil and sprinkle all seasonings. Mix gently to coat evenly.
  4. Pour chicken broth around the edges and squeeze lime juice over the top.
  5. Cover and cook on low for 5–6 hours or on high for 2.5–3 hours, until chicken is tender.
  6. Shred or slice chicken and stir everything together.
  7. Serve in warm tortillas with toppings of choice.
