Method
- Add the sliced peppers and onions to the bottom of the crockpot.
- Place the sliced chicken on top of the vegetables.
- Drizzle olive oil and sprinkle all seasonings. Mix gently to coat evenly.
- Pour chicken broth around the edges and squeeze lime juice over the top.
- Cover and cook on low for 5–6 hours or on high for 2.5–3 hours, until chicken is tender.
- Shred or slice chicken and stir everything together.
- Serve in warm tortillas with toppings of choice.
