Ingredients
  

  • 1.5 lbs beef steak cut into large pieces
  • 4 medium potatoes cubed
  • 2 carrots sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup low-sodium beef broth
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat and lightly sear the steak pieces for 1–2 minutes on each side to enhance flavor.
  2. Place the potatoes, carrots, and onion at the bottom of the crockpot.
  3. Add the seared steak on top of the vegetables.
  4. In a small bowl, mix garlic, paprika, thyme, rosemary, salt, and pepper. Sprinkle evenly over the steak and vegetables.
  5. Pour the beef broth into the crockpot.
  6. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the potatoes are tender and the steak is flavorful.
  7. Stir gently before serving and garnish with fresh parsley.

Notes

For extra richness, add a tablespoon of butter during the last hour of cooking.
