- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
- In a large bowl, combine pumpkin puree, oil, sugar, and eggs. Mix until smooth. Stir in dry ingredients until just combined.
- In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Pour half of the pumpkin batter into prepared loaf pan. Spread cream cheese mixture on top, then cover with remaining batter. Swirl gently with a knife.
- Bake for 50–55 minutes, or until a toothpick inserted comes out clean. Cool before slicing.
Notes
For extra flavor, sprinkle a little cinnamon sugar on top before baking. Store leftovers in the refrigerator.
