Frittata
  • 8 large eggs
  • 1/4 cup milk
  • 1 cup diced turkey ham
  • 1 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1 small onion finely chopped
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, smoked paprika, salt, and pepper until smooth.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add the onion and cook for 2–3 minutes, until softened.
  5. Add the green and red bell peppers and sauté for another 3–4 minutes.
  6. Stir in the diced turkey ham and cook for 2 minutes.
  7. Pour the egg mixture evenly over the sautéed vegetables and turkey ham.
  8. Sprinkle the shredded cheddar cheese over the top.
  9. Allow the frittata to cook on the stovetop for 2–3 minutes without stirring.
  10. Transfer the skillet to the oven and bake for 12–15 minutes, or until the center is set and the top is golden.
  11. Remove from the oven, sprinkle with fresh parsley, and let cool slightly before slicing.
