Banana Pudding Fluff
  • 3 ripe bananas sliced
  • 1 cup cold heavy cream
  • 1 cup cold milk
  • 3.4 oz instant vanilla pudding mix
  • 1 cup mini marshmallows
  • 1 cup crushed vanilla wafer cookies
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • extra wafer cookies and banana slices for topping

Method
 

  1. Beat the heavy cream with a mixer until soft peaks form. Set aside.
  2. In another bowl, whisk the cold milk with the instant vanilla pudding mix until thickened, about 2 minutes.
  3. Fold the sweetened condensed milk and vanilla extract into the pudding until smooth.
  4. Gently fold the whipped cream into the pudding mixture until fully combined.
  5. Add the banana slices, mini marshmallows, and crushed vanilla wafers, folding gently to keep the mixture light.
  6. Transfer to a serving bowl and refrigerate for at least 1 hour.
  7. Top with extra wafer cookies and banana slices before serving.

Notes

For extra flavor, fold in a handful of shredded coconut or a sprinkle of cinnamon. Best served the same day to avoid browning bananas.
